Crispy Brown Hash Recipe with Mushroom Gravy
If you have some chicken leftovers that you don't know what to do with, try this tasty and cheap recipe.
Ingredients For the Crispy Brown Hash
- 1 cup chopped cooked chicken or other cooked meat
- 1 cup of cooked and diced potatoes
- 1 chopped onion
- 1 cup of chopped celery
- 1 tablespoon of chopped parsley
- salt and pepper to taste
- One chicken stock cube
Ingredients For the Mushroom Gravy
- One quarter of a cup of mushrooms
- 2 Tablespoons of Flour
- 1 Beef stock cube
- 2 Tablespoons of butter
How to Cook your Crispy Brown Hash
For the Crispy brown hash, firstly grind the chopped chicken in a grinder. In a mixing bowl add the onions to your ground chicken. Add the onions, green peppers, parsley, celery and diced potatoes to complete your hash mixture.
Put some oil and a knob of butter in a frying pan on medium heat. When the oil is hot, empty out your hash mixture from the mixing bowl into the frying pan, spreading it around the pan and flattening it on the top with a spatula, pressing on the mixture with the spatula.
Cook for about 10 minutes to 15 so that it gets crispy on the bottom.
Then crumble the chicken stock cube into half a cup of water and add this to the pan of hash. Mix around then place the whole mix in the oven for about 10 to 15 minutes.
Cooking your Mushroom Gravy
Whilst your hash is cooking you can prepare your mushroom gravy. Pan fry the mushrooms in butter. Add flour and stir. Crumble your beef stock cube in water and add this. Cook until the mixture boils and the sauce is thickened.
Serve your hash brown on a plate and pour on the mushroom gravy in the middle or on the side for a yummy and inexpensive meal
